Stuffed Sweet Potato with a Chipotle Vinagrette
Welcome to Assembled’s third newsletter and congrats to the Detroit Lions on a great season! 🦁Today’s recipe is a Stuffed Sweet Potato with a Chipotle Vinagrette! Sweet potatoes contain fiber and antioxidants that promote the growth of good gut bacteria and contribute to a healthy gut.
The following ingredients are needed for this recipe (1 serving)
1 sweet potato
1/3 cup of broccoli
1/3 cup of sliced mushrooms
1/2 cup of black beans
1/4 cup or red onions diced 1/4 of diced avocado
1/4 cup of diced tomato
A sprinkle of feta cheese
1 dollop of Greek yogurt2 chipotles in adobo sauce
Olive oil, red wine vinegar, honey, oregano,
cumin, and salt and pepper
Instructions:
Sweet potato:
The sweet potato goes in the oven at 350 degrees until the sweet potato is thoroughly cooked
Vegetables and beans:
Slice up the broccoli into smaller pieces and sauté it on low to medium heat with the pan covered.Then add in the sliced mushrooms in until they are almost cooked. Next, add in the black beans into the pan. Add a dash of cumin, salt and pepper to the pan and thoroughly mix until everything is coated
Dressing:
Blend the following ingredients together: 1/4 cup of red wine vinegar, 2 chipotle peppers and 1 tablespoon of the adobo sauce, 1/2 teaspoon of oregano, and 1 teaspoons of honey. Add salt and pepper to taste. Next, slowly add in 1/4 of a cup of olive oil into the blender until the dressing has emulsified.
Last Step:
Build the stuffed sweet potato by adding in the beans and vegetables, add the sliced tomatoes, avocado, feta cheese and red onions on top. Lastly, pour the chipotle vinagrette on top of the sweet potato and finish it off with a dollop of Greek yogurt!
